HAZELNUT
 

Turkish hazelnut is categorised into two in terms of quality, such as Giresun and Levant.

Giresun Quality: Fat hazelnuts grown in the entire province of Giresun and fat hazelnuts grown in Beşikdüzü, Vakfıkebir, Çarşıbaşı and Akçaabat towns of the province of Trabzon, which are more or less similar to Giresun quality. These are the highest quality hazelnuts in the world. These are the hazelnuts that have the highest level of skin separation among the types in the world.

Levant Quality: This is the common name given to all hazelnuts that are grown in regions other than the region of Giresun quality hazelnut. Called Levant Akçakoca, Levant Ordu, Levant Trabzon or Levant Samsun depending on the place they are grown, these hazelnuts have a lower level of fat than the Giresun quality hazelnuts but a higher level of fat than those grown in the other countries and a better taste.

In-Shell Hazelnuts


Round Hazelnuts: These are spherical hazelnuts with approximately the same length, width and thickness. These are of medium size and high quality.

They have high seed yields (efficiencies), as well as high fat and protein rates. All types that can be easily separated from skin and whitened belong to this group. They are easily broken because of their circular shapes.

In this group, Giresun Fat Hazelnut is the highest quality type in the world. Furthermore, Palaz, Mincane, Foşa, Kan, Çakıldak, Kara are in this group.

Pointed Hazelnuts: This is the type with the length a little longer than the width and the thickness. These hazelnuts produce more scrap when breaking. Therefore, they are mostly marketed in shells. They have types called Sivri and İncekara.

 

Almond Hazelnuts: This is the type with the length much longer than the width and the thickness. These are generally big and showy but have low quality. They are not legible for breaking and processing. They are consumed as snack, in shells and in undried form. They have two types called Circular Almond and Flat Almond.

 

Processed Hazelnut Kernels

Blanched Hazelnut Kernels
Definition: This is the product that is obtained by separating hazelnuts from the skin and partly whitening them.
Applications : Used in chocolate industry and salty hazelnut production.

Roasted Hazelnut Kernels
Definition : This is the product that is obtained by roasting hazelnut seeds. It can be prepared in slightly-, medium- or over-roasted forms using the desired level of roasting and in the desired category of fully or partly unskinned.
Applications : Used in chocolate industry and as snack.

Chopped Hazelnut Kernels
Definition : This is the product that is obtained by cutting the natural or roasted hazelnut seeds in millimetric sizes (2-4 mm, 3-5 mm, etc.) with proper techniques.
Applications: Used in making ice-cream, biscuits , chocolates and pastries.

 

Sliced Hazelnut Kernels
Definition : This is the product that is obtained by slicing the hazelnut seeds in laminates with proper techniques.
Applications : Used in making pastries.

Grinded Hazelnut / Hazelnut Meal
Definition: This is the product that is obtained by grinding natural or roasted hazelnut seeds with proper techniques.
Applications: Used in making pastries, biscuits, ice-cream.

Hazelnut Mash
Definition: This is the product that is obtained in partially crushed or totally crushed and homogeneous form by roasting hazelnut seeds and separating the skin partly or wholly with proper techniques followed by the addition of various seasonings with different tastes, and one or more additives when necessary.
Applications: Directly consumed or used in making chocolate or pastries.

Hazelnut Paste
Definition: It is a viscose semi-product obtained by crushing roasted hazelnut seeds (slightly, medium or over-roasted) with proper techniques and used in making crushed hazelnut.
Applications: Used in making ice-cream and chocolate.

 

Fried / Salted Hazelnut Kernels
Definition: This is a product obtained by salting and roasting hazelnut seeds or by frying them in food grade oil.
Applications: It is presented directly to the consumer.


Roasted In-Shell Hazelnuts
Definition: This is a product that is obtained roasting cracked hazelnuts in shell. They can be salted before roasting.
Applications: It is presented directly to the consumer.


 

Decorticated Hazelnut Kernels


Decorticated Hazelnut Kernels (Standard 1)
Definition : These are hazelnuts with a diameter of 13-15 mm which have been separated from the hard shell.
Applications : These are the raw materials for processed and highly processed hazelnuts.


Decorticated Hazelnut Kernels (Standard 2)

Definition : These are hazelnuts with a diameter of 11-13 mm which have been separated from the hard shell.
Applications : These are the raw materials for processed and highly processed hazelnuts.


Decorticated Hazelnut Kernels (Standard 3)

Definition : These are hazelnuts with a diameter of 9-11 mm which have been separated from the hard shell.
Applications : These are the raw materials for processed and highly processed hazelnuts.
